The mastermind behind the sizzling smokehouse burgers and appetizing wood-fire grilled steaks is none other than the visionary himself, Executive Chef Richard R. Schafer. The Hideout has certainly turned up the heat with this new addition to the resort’s team. Richard comes from a long history of dishing out the boldest and most flavorful cuisine. The chef has undergone some of the most extensive food and wine training at the Culinary Institute of America and the 3 Michelin Star Alain Chapel restaurant in Mionnay, France. Richard holds an advanced baking degree from the Dunwoody Institute in Minneapolis, Minnesota; Pinot Noir Celebration in Queensland, New Zealand; and the Court of the Sommeliers in Missoula, Montana.

If Richard’s culinary expertise isn’t enough to make your mouth start to water, then come on down to the main lodge’s Longhorn Dining Room and the Copperhead Bar. Both dining areas offer superb views overlooking the golf course and Lake Brownwood. Although, we can’t guarantee you will pay much attention to the view — your attention will be quickly captured by the appetizing creations from the kitchen. All steaks are USDA grass fed Black Angus beef and are cooked to perfection on our signature wood fire grill. Prepared sautéed, grilled or peppercorn crusted and finished with our maître d’ butter. This appetizer is available on both the bar and dinner menus. The dish offers a new spin on the classic shrimp cocktail, featuring a bed of six shrimp topped with avocado, tomatoes and a sweet and spicy tang flavored by a Sriracha/citrus vinaigrette.
